Seattle Locals Sought for Hidden Eatery Recommendations by Today

Help me narrow down the best hole-in-the-walls for a story (on a deadline!!) I'm a local and am having a TOUGH time narrowing down the incredible Seattle hole-in-the-walls to include in a story I'm writing. There are just too many. Due to my word count, I only have space for 2-4 more, so I wanted to check in with other locals and see which of my favorites are most-loved. Which would you guys pick? Which are you not a fan of (I know I might be in the minority on some of these)? Here are your choices: Community Grocery & Teriyaki Saigon Deli Pigfish Cafe Plaza Garibaldi Betsutenjin Ramen Okinawa Teriyaki Zouave Restaurant I'm tempted to include Un Bien, but it's so popular and frankly, I haven't eaten there enough to decide if all of the offerings together justify including it. Ideally, I want to highlight spots that aren't as hyped/on the radar of tourists and don't have more than one location, but open to making exceptions. Here's what I'm including, outside of the above: Kathmandu MoMoCha Toshi's Teriyaki Grill Jack’s Fish Spot Falafel King El Cabrito Mama Sambusa Kitchen Seattle Fish Company Cedars of Lebanon (I know they might close, but I have to include -- they're too good) Pacific Inn Pub Indian-Nepali Kitchen Los Costeños Seattle Fish Guys Aladdin's Gyro-cery and Deli Slice Box La Cabaña Feel free to share your thoughts on these places too. If you have a place that's amazing and super hole-in-the-wall outside of what I'm already including and the selection I'm trying to narrow down, let me know and I can try it before writing. I'm especially interested in hidden spots (think, eateries tucked inside markets, fish purveyors that can cook up on the spot, etc.)
